St. Nick's Eggnog

This takes more patience than skill. Many folks buy it because they think it is "so hard" to make. It's super easy, actually.

Ingredients:

6 eggs, well beaten
4 cups milk (2% or more), divided
1/3 cup sugar
1 tsp vanilla
(tiny) pinch salt
1/4 tsp nutmeg

Directions:

On LOW/med heat (4 on electric stove) mix eggs, 2 cups milk, sugar and salt.
Stir gently and continuously (about 15-17 min). Thicken to coat back of spoon.
(Do not overcook or you'll get scrambled eggs.) This is the patience part.
Remove from heat and add 2 cups milk, one at a time stirring constantly.
Add vanilla and nutmeg.
Pour through a mesh strainer a few times and refrigerate.
Makes 1 quart plus some for tasting. Enjoy!

p.s. add a shot or two of spiced rum or brandy if you like
