
Sweet Potato Casserole- Nikki Gibson

Sweet Potato Casserole
2 cups of mashed sweet potatoes (no juice)
1 ¼ cup of white sugar
2 eggs, beaten
¾ stick of melted margarine
1 cup of milk
½ teaspoon of nutmeg
½ teaspoon of cinnamon
Topping:
¾ cup of crushed corn flakes
½ cup of brown sugar
¾ cup of melted butter
½ cup of nuts
Preheat oven to 300 degrees. Mix all ingredients well and place in a greased dish. Bake for 20 minutes.
Topping: Mix and sprinkle on top after baking the initial 20 mins. Bake an additional 10 – 15 minutes
Tip: we bake sweet potatoes on 400 deg for about an hour, let them cool; peel and mash them to make the 2 cups (1 large sweet potato is about a cup) – you can also do this the day before!
